This deserves it's own post... but then again doesn't really... so in an effort to save your from reading a bazillion-word post this Monday morning [After all some of you have some St. Patrick's Day recovery to do!] I'll keep this short and sweet. Oh. So. Sweet. And savory!
Pesto Marinated Cherry Tomatoes
1. Grab a bucket [fine, a small container] of cherry or tomatoes
2. Marinate overnight in the fridge in your favorite pesto. If it's super thick feel free to thin it with a bit of extra virgin olive oil and/or vinegar.
3. Serve at room temperature the following day by stabbing them with toothpicks or tossing them into your favorite salad. The pasta salad from yesterday's post? AMAZING with these! Make it.
