I ran away again, huh? Let's just refer to January as that crazy month where I went MIA while plotting some very big changes around here. I'll let you in on the insanity soon ;) I wrote no less than 10 new recipes the other day [cue excited squealing] and cannot wait to start recipe testing for you guys! I suppose I'm also a bit excited to eat them all. Just looking through my recipe journal has me beyond giddy.
So I think it's safe to say that you are all quite familiar with my love of veggies. I think they're rockstars. So for this month's What I Ate Wednesday posts I'm bringing back Veggie Love month for the month of love! It's the perfect pairing for a month typically marked by heart-shaped chocolate and confessions of undying love, right? I think so. Vegetables need love too!

DeleteLOVE veggies!!! Aside from a big giant salad I love to roast veggies this time of year! Either a bunch of different veggies roasted with balsamic vinegar or squeezing as many as I can into a big smoothie, I love them!!
