Oh Hello Blog Land! WIAW #107

I ran away again, huh?  Let's just refer to January as that crazy month where I went MIA while plotting some very big changes around here.  I'll let you in on the insanity soon ;)  I wrote no less than 10 new recipes the other day [cue excited squealing] and cannot wait to start recipe testing for you guys!  I suppose I'm also a bit excited to eat them all.  Just looking through my recipe journal has me beyond giddy.

So I think it's safe to say that you are all quite familiar with my love of veggies.  I think they're rockstars.  So for this month's What I Ate Wednesday posts I'm bringing back Veggie Love month for the month of love!  It's the perfect pairing for a month typically marked by heart-shaped chocolate and confessions of undying love, right?  I think so.  Vegetables need love too!

Tell us about your favorite vegetables.  Share your go-to cooking/prep methods for veggies.  Talk about how you add extra fruits and vegetables to your daily eats.  Challenge yourself to eat more vegetables this month/week/year & any other veggie-centric topics you can whip up!  Have fun with it =)

Even for a veg lover such as myself, I tend to find myself in food jags from time to time and can always benefit from a shake-up of sorts.  Though it's not difficult to get me to eat my veggies, I have been seriously slacking as of lately.  I've been on a bit of a breakfast, brunch, and brinner kick and have been crushing on carbs, glorious carbs and snubbing the rest.  Scones, pancakes, toast, bagels, cereal, and french toast have been my BFFs this past week and it's time to get my act together and eat. those. veggies!  Are you with  me?

In other news: It's 4 am and I'm awake.  Make.  It.  Stop.

  5. I'm glad I was psychic and googled "WIAW February" so I could find--and then alter, as per usual--the February logo from last year. [Or maybe I just happened to have it saved in my documents folder...no one will ever know...]

  9. LOVE veggies!!! Aside from a big giant salad I love to roast veggies this time of year! Either a bunch of different veggies roasted with balsamic vinegar or squeezing as many as I can into a big smoothie, I love them!!

    2. I too am suspicious, I swear when I read your fist paragraph Jenn I thought I saw the word preggers in there somewhere. Me thinks rough month + plus husband home from a lengthy tour, might be pointing to something. If so you go ahead and keep that secrete till just the right time.
