Happy What I Ate Wednesday, Loves!

Breakfast was scrambled eggs sprinkled in parsley and doused in hot sauce alongside two whole grain waffles with maple syrup. And coffee, always coffee! I snacked on a banana and my b-vitamins a bit later. Lunch? Excuse the seductive mess of cheese -- I've been going cauliflower stuffed twice-baked potato crazy. I made a bunch and have been scarfing them all week long. Even P will eat them... and he hates cauliflower! We had dinner super late, so in-between I snacked on some spanakopita. For dinner was the token "EAT ALL THE LEFTOVERS!" night: 1/2 another twice baked potato, some hot homemade spinach and artichoke dip, sauteed garlic mushrooms, some grape leaves, and a giant radish/cucumber/almond salad to round it all out.

Spanikopita looks good, and so does your baked potato! We also have those dinners that consist of odds n' ends in the fridge, sometimes four partial meals in one sitting. Guess that's how it goes when you're cooking for two!
