I have so many goals and aspirations this month its ridiculous! Running, for instance. I can run a mile and a half without stopping but any longer than that and my go-go-gadget legs turn to jello. Sometimes I stop from a side cramp, other times its because my knees hurt, and other times its because I just can't flipping do it any longer. No more excuses! I'm going to keep at this and work my way up to three miles without stopping. I'm even going to sign up for a 5k with Shauna [Yes S, it's happening! Get ready!] and Paul and run the entire thing. Other goals of mine involve reading more, writing as much as I read, and coming up with LOTS of recipes based on seasonal veggies. I vow not to go pumpkin overboard though, we already know what happened when I discovered sweet potatoes. How embarrassing ;)
I'll share more of my goals and progress reports in the next few WIAWs -- but for now, let's get on to the eats!
[breakfast]
Before hitting the gym I downed a banana. Pretend there's photo evidence of this. After Crunch + Zumba Toning I was fairly ravenous and decided to whip up a batch of Irish Nachos for breakfast! Of course nachos aren't your typical morning fare, so I paired these bad boys with a few fluffy scrambled eggs and a steaming hot cup of coffee. Perfection!

Taco Salad with buckets of veggies, peppers from my garden, pineapple mango salsa and dressed with grated habanero cheddar and fresh guacamole. This is one of my absolute favorite salads to eat year-round. I didn't have any black beans this time but they are marvelous paired with all the crisp veggies. Oh and the tomatoes? Legendary!
[dinner]
So. Many. Veggies! I topped a veggie burger with ketchup, mustard, and sprouts atop a toasted whole grain pita and threw inn some green beans and almonds for good measure.
[snacks]
Snacks for the day included fresh fruit, some blanched asparagus spears that I munched while making asparagus pesto, crinkle cut carrot "chips" and some unphotographed treats while watching movies with P. He plopped on the couch with peanut m&ms and football-shaped reeses and I may or may not have stolen a few handfuls of goodies. Um, I so did. It was delicious.
So that's my day of eats!

You should try intervals with the running...run walk....will help your legs get stronger! Love me a good veggie burger, no burger is complete without mustard and ketchup :)

ReplyDeleteLove the theme girlie! Also good luck with the running! But here's a secret..you can take walk breaks when you're running and as long as your overall pace is decent...NO ONE WILL EVER KNOW! ;) Plus at races it's easier to walk and drink water at the water stations than run and try to dump it in your mouth at the same time. Just sayin.

ReplyDeleteLove the goals! I'm always trying to run more,but its a struggle for sure. Good for you for sticking with it!! I also like that you're going to try and incorporate more seasonal fare into your recipes. I love fall produce - such a festive way to eat well and boost your daily fiber intake a bit.

ReplyDeleteSounds like my type of goal for running! I can only run 5 minutes straight (I had hip and knee surgery), I def should sign up for a 5k to get my running on! Good luck :)
