[pre-brekkie detox] ACV + gingerberry kombucha on ice [breakast] black coffee and a big bowl of ramen with homemade seasoning... random! but good =) [snack] lovegrown apple walnut granola and fage plain greek yogurt [lunch] a giant triple-bean veggie burger salad with spinach, black beans, asparagus, red pepper, cucumber and light ranch dressing + a mason jar of cucumber water [snack] cherries + cucumber slices [dinner #1] a freaking perfect piece-o-salmon along with some leftover cucumber salad -- recipe coming soon! [dinner #2] two scrambled eggs with onion, zucchini and hot sauce + lots-of-water
I ate my... er... dinner[s] fairly early in the day and had a super late night. Inevitably, I wound up prancing around the pantry for something else to stuff in my face. I didn't have anything dessert-y on hand, but I did manage to leave my pantry clutching a bag of graham crackers and dark chocolate baking chips. Ummm hello deconstructed s'mores!
So are you guys freaking out over the fact that I haven't posted a Savory Stuffed Sweet Potato in a little while? It finally happened. Sweet potatoes and I had a little lovers quarrel and are not currently on speaking terms. Tragic, I know! Not to worry -- I'm sure we'll kiss and make up super soon! Minus the kissing. That would be weird, even for me =)
So we're still summer staple-ing it up over here [wow that was incredibly lame of me] and I decided this week to share some of the summer vacation eats I enjoyed during my last road trip to Fayetteville to visit the fam. Though they're not exactly my family by any sort of genetic binding, they're still family to me. But really, I'm like a stray cat. I'll adopt anyone that feeds me as my family... and if they scratch behind my ears and tell me I'm a good kitty that's just a freaking bonus. But no butt rubs. I bite.
Moving on!
Here are some of my favorite dishes from the weekend! I ate at least half my meals from porcelain ice cream cone bowls and the fruit and yogurt bowl above is no exception. We also had the most AMAZING Vietnamese food of my life at Grilled Ginger. I ordered the Spicy Chili Shrimp with Pineapple + Veggies and all but licked the plate clean. I can't wait to go back and try something else off their menu! Though the urge to order the same exact entree will be pretty strong -- it was divine! There was also a jumbo buffalo shrimp salad in my belly that weekend as well as some of Cindi's beyond baller waffles. Is it any wonder why I made them adopt me? Seriously. Love them so!
Ohmygosh *AND* I got to partake in my first ever wine tour and tasting! Such a blast. It's quite possibly the only time in my life that it was socially acceptable [and downright classy] to get schwasted at noon. Surely it was one of the highlights of my summer =)

I have yet to try kombucha..Is it really life changing? Oh, I can't imagine not being on happy terms with my dearest friend, sweet potatoes! Hope you guys reconcile soon! I made Smores graham krispie treats and they were to die for! Glad you had fun!! Wine tasting sounds really good right now!

ReplyDeleteLove the deconstructed s'mores. I often get creative when I'm clearly too lazy to make a big "to do" and bake, so I end up with a piece of pb toast with chocolate chips. Or I'll throw chocolate chips in some cereal and eat it just like that. Really, I just need to put chocolate chips on something...

Loving all the eats...especially that bean burger which I've already pinned...at least I think I did...maybe I should do it again just to be sure! ;) Guess what I got at the farmer's market on Saturday! Yellow squash! Guess who's recipe for cheesy squash casserole is going down this week?! Oh yeah!!
