Summer Staple Shenanigans + WIAW #81

I thought my foodie collage would look cool with a vintage filter.  Fail.

What I Ate... Last Wednesday!

[B] banana + a big handful of dry cereal (cinnamon oat squares) + coffee + gingerberry kombucha with a shot of ACV and LOTS of ice [S] 1/2 a cuke's worth of cucumber slices while making veggie burgers [L] a super tasty triple-bean veggie burger + side salad with more veggies [S] a bowl of cherries + another banana [D] savory stuffed sweet potato + asparagus spears [D] yogi tea + a handful of dark choc chips

As always, I drank lots and lots of water all day long -- I think there was a second cup of black coffee that snuck in the lineup as well.  I can't be certain... Ok Ok it did! =)  And I loved it!

Veggie Tuna Salad Stuffed Cucumber Cups

I need protein to fuel my workouts but I'm constantly craving raw cucumbers... this dish is the best of both worlds and is super easy to prep ahead of time for speedy lunches during the week.  They're+ light, cool, and utterly refreshing!

Last week I mentioned that I'd share a few favorite summer tunes with you guys as part of our summer staples shenanigans.  Disclaimer: I listen to anything and everything... but I'm a dirty little hipster at heart, I can't help myself.  Think of this as the type of summer playlist you listen to while sprawled out face-down on the beach with a microbrew or while driving around aimlessly on an uber hot day.  It's very chill, unlike the Pitbull and 50Cent I shake it to in Zumba =)
