What I Ate Wednesday WIAW 73

[morning bevvys] hot lemon water + black coffee  [breakfast] peanut butter on whole grain toast with chia seeds + a banana  [snack] love grown apple walnut granola and greek yogurt  [lunch] mexican pizza lasagna remix  [snack] zucchini rounds with belle chevre honey goat cheese and jalapenos  [dinner] I took the leftover filling from the mexican pizza and made lentil veggie tacos - yum!

and, as part of our Sensible Snacking theme for the month, 
here are a few of my favorite snacks from the week:

[zucchini rounds with honey goat cheese and red jalapenos]
[zucchini rounds, cucumber slices, and pita wedges with roasted red pepper hummus]
[quinoa rice crackers with goat cheese and jalapenos]

WIAW Sensible Snacking with Zucchini Rounds Cucumber Hummus Goat Cheese and Jalapaneos

Recently I've rekindled my challenge to sneak as many extra veggies into my day as possible.    Snack time is PERFECT for a little extra veg action.  If you have a favorite veggie snack - let me know what it is in the comment section or in your post!  I'm sure we could all use a few new ideas!

So yes -- snack sensibly!  But sometimes...

Thin Mint Strawberry Shortcake and Vanilla Frozen Yogurt
Thin Mint Cookie Froyo!!!!!!  Well, technically it was a trio of thin mint, tahitian vanilla, and strawberry shortcake frozen yogurt topped with pure trash candy and cookie crumbles -- I haven't had frozen yogurt in months and honored my cravings to the fullest.  Worth it!

  11. You always eat so well. I always read your blog after I write my own, so I never write what you ask. I have a bad snacking protocol. I eat something good so that I can eat something bad. I guess I'm all about balance!?

  17. I had the Thin Mint Frozen Yogurt a few months ago while visiting a friend and it was SOO good! I love all things minty especially thin mint cookies so Thin Mint frozen yogurt is so amazing.

  21. I LOVE the idea of small bites for snacks. I am forever coming across adorable and delicious hors d'oeuvres recipes that I never get to make because, well, I'm 26 and don't have friends that appreciate the wonder of a home dinner party with champagne and hors d'oeuvres ;).

    But all I need to do is make a small batch for a snack! Can't believe I didn't think of it before! There's a goat cheese and veg crostini recipe I really want to make. Anything with goat cheese + cucumber combined is marvellous in my mind :).

  31. I really want to try the honey goat cheese now--it sounds so good! I also had pb on whole wheat toast this morning, except without the chia seeds. Your dinner and lunch also look awesome!! Great WIAW as always. *sigh* I'm a little obsessed with WIAW.

  35. I like all those zuke round snacks you've got going on. I like using cucumber rounds instead of crackers and putting slices of cheese on them. Also... and this maybe weird... dipping carrots in marinara sauce. MMM...
