[Recipe Quickie] Spicy & Savory Stuffed Sweet Potato

I teased you guys with this bad boy yesterday and it's about time I deliver the goods!

Mexican Savory Stuffed Sweet Potato

Spicy & Savory Stuffed Sweet Potato
[a little sweet, a little spicy, & quite possibly one of the most delish things you can stuff in your face]

That's What She Said

What's in it?
1 fluffy orange sweet potato, baked or microwaved
a dollop of greek yogurt
1/2 cup black beans
1 tsp green onions or chives
1 ounce grated hot habanero cheddar

combine + swoon away

you can also try it with any of [these] yummy topping combinations! <3

  2. I love the combination of sweet potatoes & black beans!   normally I add sweet potatoes into my burritos instead of rice, so so good!

    I have all these ingredients... I may just try it out baked potato style :)

  29. Ok, I absolutely can't wait to try this. I am not a huge fan of sweet potatoes, because, well, they're sweet. But I can dig on a savory sweet potato. And my husband will love it too. I will have to let you know how it turns out! (and the reviews from the hubby and mouths of babes)
