While I catch up with a few of my favorite people evahhh, you guys get to catch up on some of my absolute favorite recipes from the past month or so.  I promise it's a fair trade.  No?  Well then OBVIOUSLY you need to be part of my next vacation.  Get on that =)

But seriously, these recipes rock my world and then some!

veggie tuna salad cucumber cups
loaded mexican sweet potato black beans guacamole greek yogurt

  3. Have fun in NY!  I can't wait to try your mashed cauliflower recipe - I've been looking for a recipe for a while, but I've always been nervous to try it.  The addition of the onion and garlic  seems wonderful though - I might even try it tonight!

  4. I tried the sweet potato & it was DELISH! I made a few changes because I don't like black beans. I used black olives & just the cheese I had on hand. LOVE!!

  8. Those tacos have me drooling. I am always and forever a veggie taco fan - there are so many endless combos you can stuff them with! Enjoy your TRIP! NY!!! AAAHHHH!

  10. I make a meal with Jersey sweet potatoes, beans, and veggies almost every week, but yours looks awesome! I'll have to try the lentil tacos soon; I never thought to use them like that! Have fun!
