Since we're greening up our eats this month,
Here are a few of my latest and greatest GREEN obsessions:
Ready to green your eating routine? [Yeah you are!]
Here are a few tips to get ya started:
Herb it up! Dust your kitchen creations with chives, basil, parsley, thyme, oregano, etc...
Take your favorite dishes to the next level by serving them on (or under!) a delicious pile of arugala, romaine, spring mix, shredded cabbage or other leafy goodness!
Toss green grapes, pears, avocados or apples on your favorite salad -- they pair fabulously with greens as well as tofu, potato, chicken, and tuna salads.
and now, a little What I Ate Wednesday action [Friday's day of yum]
[breakfast] yogi green tea with kombucha + dry roasted almonds + clementines [lunch] a little of each: chips + salsa + veggie fajitas + salad + refried beans [dinner] leftover veggie fajita deliciousness stir-fried with fluffy quinoa and drizzled with sweet chili sauce
I love ordering a big skillet of veggie fajitas at mexican restaurants. It's enough for 2-3 meals and it's uber easy to revamp the fresh pile of vegetables into nearly anything! Omelettes, rice bowls, quinoa stir fry, and even salads can be whipped up in record time with these leftovers handy. It's one of the healthiest options on the menu and is filling and oh-so flavorful.

ReplyDeleteBetween my husband I usually splitting the meal and my kids eating off my plate, we don't come home with leftovers too often. :) I love veggie fajitas - we go to a local restaurant that makes the best!

This restaurant in Fredericksburg makes a "veggie burger" that is this bean and grain concoction of joy that reheats beautifully and can be crumbled on or into anything. Don't worry. I reinvented it at home. :) [Still makes great leftovers.]

ReplyDeleteLove leftovers in any form. I usually get a couple veggie sides and bring some home. Maybe greening with leftovers is a good way to go.

ReplyDeleteI pretty much get leftovers wherever I go since the portions are huge but I get most excited about breakfast items! Village Inn had pumpkin pancakes and I ordered an extra side to take home and drizzle with melty peanutbutter and nuts...mmmm :-)

ReplyDeleteI love leftovers! No cooking or thinking about what to eat that day. I love to cook, but sometimes I just don’t have any inspiration. I’ve been eating a bit unhealthy the last couple of days…need lots of greens in my system.
I just went running with my boyfriend and we incorporated multiple sets of HIIT in between! We have to train hard now because we are doing the tough mudder in July in Edinburgh, Scotland !!! waaaaaaah!

ReplyDeleteWe have the latest and greatest green favorites in common. All 4 of the items you listed are often on my weekly menus. Except I haven't tried adding Cayenne to my edamame with sea salt. Sounds yummy!
ReplyDeleteOooh, love the green tips! I eat a lot of things on romaine - chicken, steak, tuna, whatev. And I was happy to hear your suggestion about avocado. I just bought one and was thinking about throwing it in egg or chicken salad. Now I know it doesn't sound like such a silly idea. :)
