More Veggie LOVE + What I Ate Wednesday #56

Today marks the second installment of the WIAW: [Love Your Veggies] month!  Last week you all shared your veggie-centric goals, meals, cooking tips and tricks, and other vegetable shenanigans in your posts and it. was. awesome!!!  Let's keep up the veggie love this month and do more of the same!

To kick things off, I wanted to share one of my favorite posts from last week!  Along with a few colorful meals and snacks, Sarah of Sweet Potato Sarah added a veggie-rich recap of her grocery haul.  I absolutely loved the idea and decided to include a few grocery photos too:

I still have an abundance of colorful yellow and orange squash and carrots in the house, but I desperately needed some more green goodness in my life!  I picked up Arugala, Spinach, Avocados, Edamame, and pickled Pepperoncini Peppers along with some Bananas, Mushrooms, Onion, and Garlic.  For quick eats, I also snagged a few amy's frozen vegetable korma dinners, a newman's own spinach pizza, veggie patch falafel balls and a garden lites zucchini souffle.  There's some other goodies in the photos too but I'm sure you can spot em all! <3  I tried to stick with as much seasonal produce as possible, though I'm certain the avocados and bananas were a delicious exception =)  Another goal of mine is to purchase mostly produce with only a few natural and nutrient dense convenience foods. You won't catch me with doritos or twinkies anytime soon =)  Though you will frequently see me face-deep in some cheddar bunnies.  

As for my What I Ate Wednesday day-of-eats, there were some fruits and veggies in the mix but... so not my norm!  I chose to photograph the day before I went grocery shopping which is always a carb-heavy day just based on the fact that I've usually devoured all the produce in the house [hence needing to drag my butt to the store for more!]

[breakfast] love grown raisin almond crunch granola with plain greek yogurt + espresso blend coffee, black  [snack]  a chilled banana [lunch] strawberry kombucha and 4 english muffin pizzas [dinner] two bowls of veggie loaded baked potato soup [dessert] a late night bowl of granola and greek along with a handful or two of honey mustard sourdough pretzel bites and a glass of two buck chuck pinot grigio.

I'm slightly obsessed with these CB2 martini glasses - any excuse to eat/drink out of them + I'm on it!

mmm....that pizza sounds so good! must try. also, i look at those amy's meals every time i'm at the store but never buy them. should probably give them a try too!

I loooove those Garden Lites!  have you had the eggplant-zucchini?  It's my favorite.  (Please read that in a Buddy the Elf voice.)

Aw! Those glasses are beyond adorable! 
I love that you included some of your grocery haul. Amy's frozen entrees are my go-to "I'm lazy and have no time/energy to cook" meals. Especially since there are quite a few vegan options! 
And YAY for kombucha! I've been drinking it like a madwoman lately.

I have been craving carbs (of the non-veggie kinds) like no other...which is good, considering my habits of overindulging in produce. Like yesterday. With the grapes and the strawberries.

It's not wonder I suddenly wanted a giant bowl of pasta-and french fries-covered in ketchup at dinner. [But since I was at a nice restaurant I went with the quinoa-stuffed acorn squash.]

Also, I cursethe day Whole Foods had their kombucha sale. I am not addicted. It is an addiction I cannot afford.

The love your veggies concept is really helping me to get more variety in my diet - although I'm still eating loads of oats and PB at least I'm actually having some veggies again, as opposed to said oats for every meal.

I do wish there was a better range of Amy's meals over here in the UK!

I have to go grocery shopping today, my house is completely empty and out of the healthy things to eat.  I love your Martini glasses I may have to do some research and get some for myself. I love Martinis and enjoy making them at home.  You eats like always look yummy!!

I love those Amy's meals.  Especially all the Indian foods.  No one else in my house likes Indian food, so that's how I get my fix.

It was a very boring food week around here, so I'm just visiting today and not sharing. :-)

I haven't had a LaCroix in ages - I loved those things when I was younger. I'm one of the rare Americans who order "Water with gas" whenever we travel out of the country. :)

Taking pictures of your grocery shopping sounds like a fun idea!  I might have to borrow that sometime lol.  For whatever reason, I like peeking into other people's carts and seeing what they're buying.  I know - I'm a creep - it's okay ;)  Thanks for hosting another great WIAW :)

Mmm I love Pinto Grigio!  That is my go-to wine, unless I'm feeling something super sweet and then I go with Riesling.

This particular one is DELICIOUS! If you put it directly on the oven rack it gets all crispy and melty and perfect -- a fabulous speedy dinner for nights that cooking is just too crazy of an option ;) xoxo

maybe you could request your favorite store carries more Amys meals? some take requests quite well and will stock the items if you promise to buy them!

omg that sale..... I bought a case and got an extra discount on top of the sale....and now I can't quit them =) so so so delish! I cant even be sure if brewing my own would be as delicious!

I've been a carb fiend too -- maybe spring produce will right our habit once it kicks into gear? if not at least we tried! <3 happy wiaw lovahh!

The vegan ones are my favorite!!!!! I try to exclusively buy those in addition to the non vegan tomato soup with stars that they make --- that stuff is magical (though i wish it were vegan too!)
