LOVE your VEGGIES month [WIAW-style]

Hookay soo...
We've already gotten the hang of how to put these weekly foodie diaries to good use:

*tracking food trends*
*noting changes in our diet/lifestyle*
*reflecting consciously on things we eat to nourish our bodies*
*making friends and inspiring others [and ourselves in the process!]*
*and so much more*

Let's add a little fun to the mix this Feb:

Peas and Crayons

For those of you WIAW-ing it up this month, I challenge you to VEG-ify your posts!

in addition to your What I Ate Wednesday posts...
Tell us about your favorite vegetables
Share your go-to cooking/prep methods for veggies
Talk about how you add extra fruits and vegetables to your daily eats
Challenge yourself to eat more vegetables this month/week/year
& any other veggie-centric topics you can think about!

Here's how it went down! <3

This will be easy since I have been eating a mass amounts of veggies lately. With my insane appetite and calorie needs while breastfeeding I have been trying to eat lots of veggies to help me stay fuller longer.

Mmmm...veggies! I've been really upping my veggie intake this last month or so, I feel like it's helped my general winter disposition! I'm much much happier!

Jenn @ Peas and Crayons said...

That's awesome! Go Lindsay! =) I'd love if you added more about breastfeeding and the need for more calories/veggies in your wiaw posts for veggie month! I'm sure your readers and anyone new visiting from the party would love to hear more. Anything your comfortable sharing of course! =) xoxo

This is perfect timing as I bought a beautiful orange pepper the other day and then picked up some other veggies for the express use in a stirfry starring the pepper!!  I also have an idea for seasoning it.  And I have a zuchhini recipe :)

Want to know something funny? My biggest veg meal of the day (which was a huge salad for dinner)...totally forgot to snap the pic for tomorrow. Ha!

Love my microwave veggie/rice steamer. Love to have a big tupperware filled with a green salad to start my week...or at all times.
