Seasonal Spring Sushi

Eating seasonally is no joke.
Fruit and veggies are so much more flavorful + nutritious during this time. Yum!
This seasonal sushi roll is so utterly fantastic that I had to share!
It's my new favorite. Hands down.

Asparagus [April-June 24]
Pineapple [March-July]
Cucumber [May-August] whoops jumped the gun a little!

Asparagus is so hot right now =)


Sweet + Refreshing!


Making this roll couldn't be easier!
Blanch trimmed asparagus in a thin layer of boiling water for a minute or two.
Then use one of my sushi tutorials to roll it up! <3

Serve with soy sauce for dipping and enjoy!
Make a few to serve as a meal or serve as a delicious side dish.


My photos came out so horrible. I was in a rush to eat! Sooo... Art Time!

Eating fruits and veggies in season is also a fabulous money saver!

This is gorgeous! I love eating asparagus and the like, when and only when it is in season...the wait is well worth it!

I just recently started making sushi at home (avocado rolls are my favorite)

I try to eat seasonally mainly because the fruits and vegetables aren't always good out of season. I always eat watermelon in season!

I tried eating seasonally, but found that a meal consisting of only seasonings wasn't very filling, and all the dried chopped herbs stuck to the back of my throat.
bwahahah.
Reeeeally bad joke, I know.

I try to eat seasonally, but I have to admit as much as I love root veggies, I am ready for the fruits & veggies of summer! I've been wanting to pick up a cookbook that is broken down into seasons for inspiration! Yum to your sushi. I love, love, love asparagus...& pairing it with pineapple?! Sounds amazing!

So true story, I was just wondering the other day when asparagus is in season! I've had the weirdest craving for it for the past couple of weeks! And I FINALLY bought a sushi mat so I can be like you and Christin! ;) I will get on this sushi making bandwagon...oh yes, I will!

This looks delicious! When you made sushi art, two of the rolls appeared to have asparagus hearts in them--nice work :)

We try to eat seasonally as best we can and now that our Farmer's Market is opening tomorrow, it will be even easier to know what's in season. Since it's a strictly local market, if they don't have it, it's not in season yet!

hahah "asparagus is so hot right now". I always try to eat seasonlly but occasionally it doesn't happen. Like those dang peppers I ate yesterday that I just about died when they were rung up.

I eat seasonally somewhat, just based on those items being on sale and better tasting!

I love this idea! My friends always want to go to sushi and I feel left out since I don't eat fish (their 'place" only has one dull veggie role). Pineapple in it = brilliant! I bet mango would be awesome too.

I definitely eat seasonally! Especially with summer fruit such as strawberries, blackberries, blueberries, etc, they are so much cheaper and taste much fresher and juicier during the summer :)

I love pineapple!! When I was preggo with my first, I literally ate a whole fresh pineapple every two days. I just couldn't get enough!

I don't like typical sushi, but I may like your take you just came up with!

Those look great. The best vegetarian sushi I've had was with squash, apples, and sweet potato. So good.

Eating seasonally is hard! I'm not very good at it.. But once my farmers market open up (next weekend Eeeep!) I'll be buying all local and seasonal produce :)

I love the addition of pineapple in this sushi recipe! Now that I think about it, I'm surprised more restaurants haven't begun adding creative fillings in their sushi...It's always fish, avocado and cucumber with an occasional piece of mango thrown in!

I try to eat seasonally, but sometimes I'm craving tomatoes in December or butternut squash in June!

Yes, I do eat quite seasonally. I can't wait until the farmer's markets come back for the summer. I love getting the fresh produce from there. It saves me money as well!
