I couldn't help myself =)
I had intended on simply dipping these bad boys in garlicky red sauce.
Then I covered them in melted parm/romano/mozzarella cheese.
and THEN dipped them in the sauce =)
Sorry there are no pictures of the cheesy goodness. I ate them in record speed!
T-Rex Chefs dip sticks in egg whites before rolling in panko
Brontosaurus Chefs dip in dijon mustard instead of egg whites
What's in it?
1 Zucchini squash
1/4-1/2 cup Panko bread crumbs
1 egg white or 1/4 cup dijon mustard
1-2 servings of Sargento Italian blend shredded cheese (or vegan cheeze)
1/4-1/2 cup Homemade or store bought marinara sauce
Garlic powder to taste
Mrs. Dash Italian seasoning blend to taste
Salt and pepper to taste
Get Cooking!
Preheat oven to 375F. Grab 2 bowls. Mix your panko and herbs in one bowl, and pour mustard or egg whites in the other. Slice zucchini into thin but hearty strips. Dip in egg white or mustard and then roll in the panko bowl. If more crunch is desired, sprinkle a little extra panko on top of each stick. Line zucchini sticks on a foil lined and olive oil greased cooking sheet. Bake for 20-30 minutes on the middle rack or until golden. If you're going to get cheesy like I did, cover sticks with cheese within the last 5-10 minutes of cooking. Pat yourself on the back b/c you just ate an entire zucchini =)

Apparently zucchini fries have been a popular thing in the blog world as of late! I've done them before, but haven't had bread crumbs around for a while to repeat it... :(

Mmmmm I have made something like this before and it was amazing. I was very proud of myself for eating an entire zucchini, however I could prob eat an entire butternut squash if made into fries!

Delicious! This is definitely one of favorite ways to make zucchini! I love the idea of dipping it in a garlicy tomato sauce...I usually make a yogurt ranch to go with it, but I'm going to try it with tomato sauce next time! :)

I need to remember this recipe for next summer when I'm picking multiple zucchini daily.
I often dip Zucchini slices in pancake batter (mixed with water) and cook them just like you make pancakes. When they are browned on each side, sprinkle with sugar. Yum!

My favorite is carrot fries. Waffle cut carrots, dump in a zippy bag w/EVOO, garlic powder, onion powder & paprika. Bake on foil lined pan. Yum!
